How do I know? Well, because I DID IT!

This is the future of baking with AI and I am going to share with you the best recipe for super delicious, chewy cookie butter cookies!

Having little to no experience in making cookies at all, I wanted to see if I could potentially expand my baking business to include cookies as a supplementary item using AI crafted recipes.

I was successful in making perfect cake recipes for my home bakery using AI, but I wanted to see if it could craft a recipe that this beginner cookier could turn into a customer-favorite cookie. And spoiler, it did!

Now this is a recipe to make simple cookie butter cookies that taste divine! I wanted a cookie recipe that yielded a cookie that was chewy and combined the best qualities of a snickerdoodle cookie (my favorite cookie) and chocolate chip cookies (everyone’s favorite cookie!), but with Biscoff cookie butter instead. Have you been drooling over all of the cookie butter desserts and treats out there like me? Yum!

Cookie butter is delicious spread like peanut butter but with a rich toasted cookie flavor. It’s really kind of hard to explain as it’s so unique.

There are many products out there, but the best cookie butter to use for these cookie butter cookies is Biscoff Cookie Butter. These are the manufacturers of the famous Biscoff Cookies also lovingly known as “airplane cookies”.

You can generally find this in your grocery store in the same aisle as peanut butter and all the other nut butters.

Not all cookie butters are created the same, so stick with Biscoff Cookie Butter and you will be alright. But in the case you cannot find it in your grocery stores, Speculoos Cookie Butter is a great runner up and I have also heard great stories about Trader Joe’s cookie butter, so give that a try if you have access to it!

Ok, now to the recipe. It’s extremely easy to make with most ingredients you probably already have in your pantry with the exception of Biscoff cookie butter and cookies. Instructions

Prepare the Cookie Butter Cookie Dough
  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Mix in the Biscoff Cookie Butter until well combined.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the crushed Biscoff Cookies.
  7. Chill the dough in the refrigerator for at least 30 minutes. This helps prevent excessive spreading.
  8. Scoop about 2 tablespoons of dough and roll into balls. Place on prepared baking sheets, leaving space for spreading.
  9. Top with a dollop of cookie butter. (Can save for after baking and drizzle on top of cookie also)
  10. Bake for 10-12 minutes or until the edges are lightly golden.
  11. As soon as the cookies come out of the oven, use a circle cutter to round out each cookie.
  12. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  13. Top with more cookie butter or Biscoff cookies as you desire.
